Puyung Hi (Puyung hai)
Puyung hi! Puyung Hai is my first recipe which is won as the fisrt winner Food Festival Contest in SMA N 4 Jakarta.
I was in second grade high school when The Dean announced Cooking Competition. The Dean is a woman. Maybe she loves cooking too.
The rule is every student shold make a group form by 3 students.
The recipe should be original, not expensive, easy to cook and full of nutritions.
Here my Puyung Hi (Puying Hai)
4 eggs
100 gr mince beef meat
10 Indonesian onion or one big shallot chopped
1 glove garlic chopped
10 gr celery chopped
salt and pepper
2 table spoon vegetable oil or olive oil
Sauce:
2 ripe tomatoes blender
1 garlic
2 red chilli chopped
30 greenpeas
1 tea spoon sugar
1 tea spoon corn flour
Salt
Cook tomato sauce together with garlic, chilli, sugar and salt. When it boiled pour some greenpeas. To make sauce thick add some corn flour.
Preparation:
Whisk eggs in large bowl together with mince meat, garlic, onion, salt and pepper. Bitting until mix well. Then finally add some chopped celery. Prepare pan with oil.
Pour eggs into to hot pan. Then cook with low heat and cover. Becareful when you turn upside of the puyung hai. Use big plate to cover.
Serve hot with sauce

Fried Rice Quick and Easy
This morning whilist I was writing suddenly I smelt fried rice. As matter of fact there is nobody cook. Maybe just because I am hungry.
I run way to kitchen and start cooking.
Fried rice:
300 gr steam rice
1 egg
3 tbs olive oil
20 green peas
1 shallot/onion chopped
2 garlic gloves crushed
2 table spoon sweet soy sauce
Salt and pepper
Preparation:
Saute onion, green peas and garlic until golden brown with 3tbs olive oil. Pour egg.
Add steam rice and stirr until all ingredients mixing well.
Stir for about 5 minutes. Then add soy sauce, salt and pepper.
Serve hot.

Salmon Soup Unique Recipe
Every Tuesday and Friday, here in Megara there is Laiki. Laiki is Greek street market. Fisherman, farmer selling their product direct to people around the city.
In Laiki you can find fresh fish and fresh vegetables. This Friday I bought some fish. I interested to the head of salmon, because in Jakarta I used to have lunch in Pasar Senen close to my former office. My favourite menu is the head of big red snapper cook with hot spicy coconut milk.
In Greece my family can't stand with hot food. I cook a head of salmon in this way.
Ingredients:
1 head of Salmon
1 big shallots chopped
1 fresh onion chopped
2 gloves garlic chopped
3 cm ginger
3 cm galangal
1 lemon grass
1 carrot
1 tomato
1 table spoon selery
1 chilli chopped
2 cup water
Preparation:
Saute onion and garlic until golden brown, add ginger, galangal, lemon grass, carrot. Then put head fish in. Pour water. Cook about 10 minutes. Before serving add tomato, fresh onion, selery and chilli.

Chicken Aroma Crusting
The chicken breast is my husband favorit. While me and my kids are prefer the legs of chicken. Chicken is less fat and more soft compare to beef and other kind of meat. It much easier to cook chicken than beef or goat meat.
Chicken aroma is breast chicken coating with bread crumbs and some herbs. I am crazy about it. Aroma is combination from rosemary, oregano and corriander. Attractive and sedutive aroma.
Here are the recipes
2 boneless skinless chicken breast ( from one breast chicken both side)
2 eggs white
2 tea spoon corn starch
2 spoon olive oil for saute
For the crusting combine:
6 slices dry bread
1 teaspoon rosemary
1 teaspoon oregano
1 garlic
1 teaspoon corriander
salt and pepper
Preparation:
Mix the herbs and dry in food processor or blender.
Blend eeg white, cornstarch, salt, lemon juice with fork in wide dish.
Make sure the chicken breast are dry enough from excess water after you wash it.
Dip both side of chicken breast into egg white mixture. Then transfer the chicken to teh crumb dish.
pat crumb on both side of chicken, its okay if some crumbs fall off. Air dry on rack 20-30 minutes.
Heat oil in non stick pan (teflon). Lay chicken in the pan and saute until golden for 3 minutes.
carefully flip chicken, then transfer to ove. Roast chicken in the pan in oven for about 8 minutes-10 minutes or until cooked trough.
Serve hot with potato and sauce lemon.

Sus Isi Fla Coklat
Bahan
250 ml air
100 gr mentega or butter
250 gr terigu
5 butir telur
Garam secubit
Vanili 2 bungkus (10 gr)
Cara membuatnya:
Panaskan air di panci lalu masukkan mentega.
Setelah cair masukkan tepung, garam, aduk hingga kalis.
Angkat dan dinginkan.
Setelah dingin masukkan telur satu persatu sambil diaduk dengan spatula hingga telur tercampur rata.
Cetak adonan sus dengan spuit dan panggang di api 180 C selama 15 menit.
Isi sus dengan fla coklat yang terbuat dari maizena, susu, gula dan coklat

Kolak = Banana in Coconut Caramel Syrup
During Holy month Ramadhan Kolak is a must serve in every moslem family. KOlak is fisrt meal for break the fasting. This year my daughter cook KOlak by herself. Just because we dont have gula merah (Indonesian traditional palm sugar) . I told her to make caramel.
Here is the recipe for KOlak Karamel
4 table spoons sugar
4 bananas cut into pieces
1 pandan leaf or vanillla
250 ml coconut milk
Preparation:
Cook sugar untuil turn into caramel, melted and dark brown. Add coconut milk and stir for 5 minutes. Add some bananas and padan leaf. Cook until banana boiled.

Nastar Yogurth
Lebaran tinggal dua minggu lagi. Hari ini mulai membuat kue lebaran. Membuat nastar dimuali dari membuat selai nenas. Cukup cepat membuat selai nenas denga blender dan langsung dimasak. Hanya satu jam sudah jadi selainya.
Biasanya membuat nastar memakai keju. Sebab keju selalu tersedi aid kulkas. Namun kali ini saya berpikir ingin mencoba memakai yogurth daripada pakai keju banyak lemaknya. Jadilah takaran keju parut digantikan dengan yogurth yang lemaknya 2%. Di Yunani biasa dijual berbagai jenis yogurth dengan kandungan lemak dari 4%, 2% hingga 0%.
Ternyata hasilnya sangat menggembirakan. Walau sempat khawatir takut nastarnya terasa asam yogurth. Ternyata rasanya tetap sama dengan nastar keju. Bahkan lebih harum dan lebih gembur.
Bahan yang diperlukan:
350 gram mentega atau butter
200 gram gula halus
2 kuning telur
500 gram tepung terigu
1 sdm baking powder
150 gram yogurth
Cara membuatnya:
Kocok mentega atau butter dengan gula halus. Setelah tercampur rata masukkan kuning telur satu persatu. Kemudian tambahkan yogurt, kocok selama 3 menit. Masukkan tepung terigu dan baking powder. Bentuk adonan nastar sesuai selera. Panggang dalam oven 180derajat C selama 15 -20 menit atau hingga keemasan.

Stifado With Beef
Stifado is Greek term for baby shallots. It taste sweeet and so delicious.
Mostly you can find Stifado menu in all Greek restaurant in Greece. Because I am not guarantee if there is baby shallots around your neighborhood.. just kidding!
Here the recipe for Stifado cook with beef.
1 kg beef cut into chunk
1 kg stifado
3 tomatoes
2 lebanon leaf
2 table-spoons of tomato paste.
1/2 nutmeg crushed (put it into a bag and hit it with a rolling pin!)
1 cinnamon stick and 3 cloves.
4 garlic cloves - finely chopped.
Rosemary sprig or two.
5 spoons of extra-virgin olive oil.
1 glass of water.
2 table-spoons of vinegar.
Fresh coarsely ground black pepper and salt.
Preparation:
1. Saute 500 gr stifado with beef untul golden brown. Add garlic, nutmeg, cinnamon and rosemary and cloves.
2. Add tomatoes slices and water. Cover until beef tender.
3. Add tomato paste and vinegar
4. Finally add another 500 stifado, balck pepper and salt. Cook until stifado soft.
Serve with spaghetty or rice.

Bakwan Mediterania
Ini hidangan untuk makanan pembuka. Rasanya gurih karena pakai parutan keju. Bahan dasarnya zukini. Zukini merupakan hidangan tepat untuk orang yang ingin langsing. Kalorinya sangat rendah. Biasanya zukini dibuat salad. Dalam buku saya Hidangan Favorit ala Mediterania ada resep zukini salad.
Kali ini saya variasikan dengan tambahan udang kupas. Karena udang makanan fav saya. Walau pun katanya udang mengandung banyak kolesterol.

Fish and Soybean Sauce
This one recipe from North Sumatra. They've called Tauco or Soybean sauce.
Mostly Saucebean sauce is salty. So you dont have to put some more salt.
1 kg fish (better medium size of fish)
200 ml coconut milk
5 table spoons soy beans sauce
3 cm galangal
3 cm ginger
1 lemon grass
1 shallot
5 red hot chillies
2 garlics
1 salam leaf
Preparation:
Fried fish until half cook
saute onion, garlic. Then add ginger, chilli, galangal, lemon grass and salam leaf. Until onion golden brown add soy beans sauce. stir and add coconut milk.
When coconutmilk boiled add some fish and simmer until fish cooked.
Serve hot.

Potato and Liver Saute
During Ramadhan I have to prepare some food that can stand for few days.
Potato and liver saute is easy to prepare. Pity my daughter doesnt like liver, neither my sons.
Ingredients:
500 gr liver
4 potatoes cut into pieces (cube)
2 ripe tomatoes
2 shallots
1 garlic
2 cm ginger
5 cm galangal
Cook liver into boiling water for about 5 minutes.
Cut liver the same size with potatoes.
Make sauce by food processor; mix tomato, shallot, garlic and ginger.
Fry potatoes for about half cook. Set aside
Then saute tomato sauce and galangal in 4 table spoon of olive oil. Pour pieces of live and fried potatoes.
Serving hot.

Papaya in Coconut Milk
This papaya in coconut milk is one of my favourite dessert during Ramadhan.
Since I was kid my mother use to served this fresh fruit.

Here the recipe of Papaya in coconut milk;
1 kilo papaya cut into pieces (cubic)
Mostly my grandmother or my mother served papaya dredged by table spoon.
Coconut milk syrup:
1 liter coconut milk boiled with 1 pandan leaf and 150 gram sugar (if you like sweet put some more sugar)
Serve papaya with coconut syrup and ice cube.
Ikan Pangek
Aneka kurma isi ternyata diminati oleh beberapa anggota milis kuliner. Melalui email mereka ingin memesan kurma isi. Namun apa daya saya berada jauh di negeri orang.
Jika Anda pemilik catering kue dan pecinta kuliner silahkan dicoba membuat kurma isi dijual dalam kardus. Kurma isi ini di negera Timur Tengah dan Afrika seperti Tunisia dan Al Jazair, Marokko dijadikan oleh-oleh.
Agar bervariasi kali ini saya suguhkan hidangan gulai khas Sumatra Barat. Saya belajar membuat gulai pangek dari Nenek tercinta almarhum Nuriah. Nenek memasak selalu lezat. Nenek memasak tanpa bumbu penyedap rasa. Rahasianya ada pada bawang merah dan bumbu yang harus sesuai dengan bahan ikan. Hingga saat ini saya memasak selalu mengutamakan bawang merah yang lebih banyak. Memang bawang memberikan ras gurih dan manis yang alami.
Bumbu pangek tidak akan saya tulis di blog ini. Sebab resepnya akan ditulis dalam buku saya selanjutnya.
Ikan pangek ini cocok sekali untuk hidangan sahur. Sebab rasanya pedas, asam dan gurih bisa menghilangkan rasa kantuk.

Aneka Kurma Isi
Menyambut bulan suci Ramadan 1429 H agar ada variasi hidangan kurma.
Kurma isi kacang yang dibalut coklat dan kurma isi krim keju.
Digambar tampak kurmanya besar-besar sebab kurma yang dijual di Supermarket disini biasanya datang dari Palestina.
Resep Kurma Coklat Isi almond
Bahan untuk 10 kurma isi:
10 buah kurma
10 kacang almond yang sudah digongseng
50 gram batangan coklat di tim (dilelehkan)
Cara membuat:
Belah tengah kurma dan keluarkan bijinya.Jika kurmanya keras, rendam dalam semangkuk air hangat yang dibubuhi sebungkus vanila selama 30 menit. Angkat dan keringkan.Masukkan kacang almond ditengah kurma dan tutup.Gulungkan dalam coklat cair. Angkat dan hidangkan jika coklatnya sudah mengeras.
Resep Kurma isi krim keju
Bahan:
10 buah kurma besar
3 sendok makan krim keju
2 sendok makan gula pasir halus
1 sendok teh parutan kulit jeruk manis
Cara membuatnya:
Belah tengah kurma dan keluarkan bijinyaBuat campuran krim keju yang dicampur dengan gula halus dan parutan kulit jeruk. Aduk rata.Gunakan sendok teh atau sendok kecil untuk memasukkan adonan krim keju kedalam kurma.Sajikan setelah diisi. Tips:Jika belum dihidangkan kurma isi krim keju disimpan dalam kulkas agar krimnya tidak cair.

Kourabiethes (Greek Almond Biscuit)
Kourabiethes adalah biskuit tradisonal orang Yunani. Biasanya hanya hadir disaat perayaan hari besar dan tahun baru saja.
Di Yunani biskuit almond ini sangat terkenal. Di beberapa toko souvenir dijual sebagai oleh-oleh para turis yang datang ke Yunani.. Biasanya dijual per kardus dan perkilo harganya 15 hingga 20 euro. Agak mirip kue putri salju (cuma bentuknya beda) namanya kourabietes. Kourabietes ini campurannya almond yang dihancurkan.
Bahan:
600g butter
400g almonds,dihaluskan
230gula halus (icing sugar)
50g air mawar
1200 g tepung
gula halus untuk pembalut biskuit
Cara membuat:
Siapkan almond yang dihancurkan menjadi bentuk halus (dipotong-potong atau blender). Gongseng sebentar di oven agar almondnya renyah (crunchy). Jangan kelamaan gongsengnya karena akan mempengaruhi rasa biskuit.
Kocok butter dan gula halus hingga lembut. Semakin lama dikocok butternya maka semakin lembut biskuitnya. Lalu masukkan tepungnya sedikit demi sedikit hingga semau tercampir rata. Masukkan air mawar dan remahan almond. Aduk adonan hingga rata. Cetakn adonan denagn tangan. Cetak bulat-bulat seperti bola kecil, lalu tekan sedit atasnya agar adonannya tidak terlalu bundar. Lihat gambar. Panggang dalam oven 200 C selama 15 menit. Ingat jangan terlalu lama memanggangnya sebab akan menjadi keras. Warna biskuit ini putih tidak kuning. Setelah diangkat kourabiethes diamkan agar dingin. Setelah dingin lalu balurkan dengan gula halus (sama dengan kue putri salju).

Soutzoukakia (Greek Meatball in Tomato Sauce)
Masakan ini sangat populer di Yunani. Hanya harus hati-hati jika ingin membeli jenis masakan ini di restoran, sebab tidak terjamin halalnya.
Hidangan bola daging ini memang disajikan dengan nasi. Nasi Yunani jenisnya beras perah. Mirip beras yang di Indonesia biasa buat beras jatah kantor. Kalau di masak nasinya jadi berpencar-pencar.
Ketika keponakan suami datang ke rumah kami, dia tidak suka nasi Indonesia. Katanya lengket. Justru nasi kita yang lengket yang pulen. He he he....
Bahan untuk 8 porsi:
500 gram daging sapi giling
1 telur
2 siung bawang putih dihaluskan
1 bawang bombay atau 10 barang merah dihaluskan
2 lembar roti tawar direndam air agar lembut
2 sdm irisan daun parsley
1/2 sendok teh daun oregano halus
Lada dan garam secukupnya
Bahan Saus tomat:
1 kilo tomat segar diblender
1 sendok teh gula pasir
1 batang kecil kayu manis
2 buah cengkeh
1 siung bawang putih
Garam dan bubuk cabe jika suka pedas
Cara membuat bola daging:
Masukkan daging giling dalam mangkuk besar. Lalu campur dengan roti yang lembut (peras air rendaman), telur, bawang putih dan bawang merah halus, lada, garam, irisan parsley dan bubuk oregano. Aduk rata adonan dengan tangan sambil diremas hingga merata. Bentuk adonan sebesar bakso dan lonjongkan.
Goreng adonan bola daging. Sementara itu di panci lain, masak saus tomat dengan cara mencampur semua bahannya. Setelah masak bola daging langsung masukkan dalam saus tomat yang mendidih.
Hidangkan dengan nasi putih.
Fish and Chips (Ikan dan Kentang Goreng)
Fish and Chips ini terkenal berasal dari UK. Namun di beberapa negera Eropa hidangan ini sering dijumpai dijual di berbagai restoran.
Kalau sedang malas memasak menu yang ruwet hidangan ikan dan kentang goreng ini bisa dijadikan alternatif pilihan.
Bahan untuk 4 porsi
500 gram Fillet ikan (kakap atau bawal)
1 kg kentang dikupas dan dipotong bentuk french fries
150 gram tepung maizena
Garam dan lada secukupnya
Perasan air jeruk lemon atau jeruk nipis
Minyak untuk mengggoreng
Cara membuatnya:
1. Cuci bersih ikan dan ambil dagingnya potong menjadi bentuk fillet lebar.
2. Taburi ikan dengan garam dan air jeruk nipis/lemon. Kemudian balut ikan dengan tepung maizena. Caranya tepung diletakkan di piring lebar dan masukkan fillet ikan diatas tepung. Bolak balik hingga ikan terbalut tepung merata.
3. Panaskan panci penggorengan dan goreng kentang
4. Setelah kentang selesai digoreng. Pada minyak yang sama masukkan fillet ikan yang telah dilumuri tepung maizena.
5.Goreng hingga kuning keemasan.
Hidangkan dengan saus mayones atau saus cabe.
Koulourakia = Greek Biscuit
Biskuit ini kesukaan anak-anak saya. Rasanya rasanya empuk di dalamnya walau diluarnya kelihatan keras. Mencetaknya juga gampang sekali.
Bahan yang dibutuhkan untuk 140 keping biskuit.
450 gram butter tawar
8 mangkuk tepung untuk segala jenis (di Indonesia tepung segitiga biru)
2 mangkuk gula pasir
1 mangkuk jus jeruk valencia (jeruk manis)
2 sd teh soda kue
4 sd teh baking powder
8 telur ukuran besar
1mangkuk susu panas
1 bungkus vanili
1 Kulit jeruk lemon atau jeruk Valencis di parut
Ukuran takaran:
mangkuk adalah ukuran cangkir teh
Cara membuatnya:
Kocok butter dengan gula sengan mixer hingga putih. Masukkan sat persatu telur, kemudian vanilla bubuk, susu dan jus jeruk, parutan kulit jeruk.
Setelah dikocok pindahkan adonan ke manghkuk yg lebih besar. Campurkan tepung dengan soda da baking powder. Lalu masukkan tepung sedikit demi sedikit hingga membentuk adonan biskuit.
Adonan harus lembut, elastis, tidak keras dan tidak lengket ditangan.
Biarkan adonan selama 30-35 menit.
Setealh itu bentuk adonan dengan membagi adonan sebesar bakso kecil. Lalu dibetuk O, S,§
Olesi loyang dengan sedikit butter dan alas dengan kertas roti sebelum dipanggang. Panggang selama 25 menit dengan suhu 180°c atau jika sudah tampak kuning kecoklatan.
Jika ingin tahan lama biskuit disimpan dalam tupperware dan tahan 2 minggu bahkan sebulan.

Kue Lapis Darurat
Sering kita mendengar kata pepatah; "Dimana ada kemauan, disitu ada jalan".
Sejak masih kanak-kanak saya paling suka kue lapis. Kue lapis yang terbuat dari tepung beras. Jika ingat kue lapis langsung saja terasa lidah ingin ngences, ingin sekali merasakan keempukan kue lapis.
Namun apa daya, bahan-bahan untuk membuat kue lapis tidak tersedia lengkap seperti di negeri tercinta. Jangankan mau mencari daun pandan, daun pisang saja sulit sekali ditemukan. Bahkan di toko Asean market sekali pun di Athena, sering tidak ditemukan daun pisang dan daun pandan.
Ya memang kue lapis paling lezat jika loyangnya dialasi daun pisang terlebih dahulu. Juga diberi beberapa helai potongan daun pandan ketika dikukus agar harum semerbak wanginya.
Akibat tidak tersedianya bahan-bahan, maka hari ini saya mencoba berimprovisasi membuat kue lapis dengan hasil yang cukup memuaskan. Walau pun harsu sabar sebab mengukusnya di dalam rice-cooker ukuran kecil, sehingga hanya dapat mengukus kue lapis dalam satu mangkuk kecil.
Yah pegel juga, namun kesabaran selalu membuahkan hasil kesuksesan.

Bahan:
200 gram tepung beras
100 gram tepung ketan
4 sendok makan minyak zaitun
250 ml susu segar
1/2 sendok teh garam
Esens pandan sedikit
Cara membuatnya:
Masukkan tepung beras dan tepung ketan dalam sebuah mangkuk besar. Lalu masukkan gula, garam dan aduk-aduk rata. Kemudian tuang susu segar dan aduk-aduk lagi hingga seluruh tepung tenggelam dalam susu (he he tidak ada tepung yang terapung)
Kemudian tambahkan minyak zaitun (asumsi pengganti santan kelapa adalah susu dan minyak zaitun).
Bagi adonan menjadi dua bagian. Satu bagian diberi warna pandan dengan esens pandan.
Panaskan kukusan (dalam hal ini rice cooker) dan ketika sudah beruap, masukkan cetakan kue lapis yang telah diolesi mentega atau butter. Tuang adonan selapis demi selapis. Agar uap air tidak jatuh ke adonan, tutup atasnya dengan serbet (lap makan).
Tutu rice cooker tidak akan tertutup rapat maka atasnya ditahan dengan ulekan cabe (batu).

Gastronomi Spanish
Couple months ago I was little bit desperate as my Indonesian friend whom lives in Spain had no reseponse my inquiry for Spanish recipes.
Until I decided to search in google. I found an original Spanish recipe whom written by Spaniyard. Finally I found Julito Rodriguez. Impressed me that he looks so funny. Because i've never seen anybody with vegetables on their heads. Julito did!
I was so happy in that time, and as soon as possible I sent him an email. I ask his permission to use his recipe for my second book. My second book still talking about love; that loves comes from foods. My first book is Love and Shock.
Time after time, I keep on waiting for his response. Finally after 4 or 5 days I got his first email. Its very friendly email that I ever get. I've never wrong judge people. I chosen him because I have feeling that he is good person.
Julio sent me his recipes and also some fotos of it.
Mari Carmen; his girl friend cooked a very special Paella for my book. Gracias Mucho Mari Carmen! Hasta La Vista!

Writing process
Yesterday a friend from mailing list ask me to give endorsement for his first script.
I read by scanning the script. Actually nothing is special or new as a the topic about motivation but he write with passion.
As for me, I considered that fresh idea is very important. You need to think alot, to read alot and use your imagination to get that idea. And it call "hinayah and hidayah" in term of spritual part.
Now I am in the process to finish my second script. God will, this second script will get published on June 2008. It's a destiny, this script the one I ignore will be the first to get published this year.
Yesterday my left leg hurt just because I take 'wudhu" bended on the ceramic bathtub. Winter time is difficult moment. When I focused on my leg then I felt hurt all over of my body. This morning I've try to forget about it and the feeling of hurt is dissappeared.
Dr. Hill states: "If you think you're sick, you are." How often do you allow yourself to focus on your illness rather than your health? When you are feeling fine and nothing ails you, do you give thanks to Infinite Intelligence for your well-being as Dr. Hill suggests? Do you require your Prince of Sound Health to keep your physical body healed and efficient at all times? To some, these actions may seem like mind games, however, today we know that our mind/body connection rules our health. Before going to sleep suggest to your subconscious mind that you will wake up healthy, happy, and terrific. With this command firmly stated and envisioned in your mind's eye, you subconscious mind will work while you sleep to make this a reality. No, it usually doesn't happen overnight, nor is it 100% predictable, but the success rate is higher than if you don't do it and it costs nothing but a positively directed thought as you drift off to sleep. As people who believe in self-help motivational literature, isn't it just common sense to practice what we preach?
